Yummy chicken wings

1/2 cup honey
1/4 cup soy sauce
1/4 tsp garlic
3 tbsp ketchup

soak all the chicken in this mixture then bake at 375 for 60 min! Yum Yum, it's even better cold the next day :)

Baked Chicken Drumsticks

8 drumsticks
1/2 cup mayo (I used miracle whip)
3 tbsp mustard
1/4 cup grated parm cheese
1 cup bread crumbs (I added some seasoning to the breadcrumbs)

Combine mayo and mustard in a bowl. In a separate bowl combine breadcrumbs, parm cheese, seasonings, and S&P if you need.
Coat drumsticks with mayo mixture, then roll in breadcrumbs.
Lay the drumsticks on a baking sheet and at at 350 for 45 minutes.

This very simple and really good. I made extra for lunches the next day, it was almost better cold. I served it with new potatoes and steamed broccoli. Kxx

Pesto Chicken

I found this recipe at Kraft Foods

1/3 cup shredded mozza cheese
1/4 cup pesto
1/4 cup dijon mustard (I used a little less than this)
4 sm chicken breast (or I used 5 chicken thighs)

Mix 1/4 cup of cheese with pesto and mustard.

Arrange chicken in single layer. Spread pesto mixture over chicken, sprinkle with remaining cheese.

Bake at 350 for 20-25 min or until chicken is cooked.

I served this with broccoli the other night...but I would suggest adding a second side like baby potatoes or risotto :) Both the men in my house ate it all up! Happy cooking!

Bruschetta Chicken Bake,
Heidi, you need an oven for this one.
1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces ( you don't even need to cut the chicken)
1 tsp. dried basil leaves (fresh is probably better)
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Make It!

HEAT oven to 400ºF.

MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.

LAYER chicken, basil and cheese in 3-qt. casserole or 13x9-inch baking dish.


This was easy as pie, although pie isn't that easy. I took this recipe from kraft foods.

turkey meatballs
(shocking heidi is going to post a recipe!!)
SAUCE
1cup chicken broth
1cup pinapple juice
1/2 cup sugar
1/3 cup red wine vinegar
2tsp. soy sauce
2tbsp. corn starch

MEATBALLS
2lb ground turkey
2 eggs beaten
1 cup bread crumbs
1tsp. salt
1/2tsp. pepper

mix all sauce ingredients together and boil until thick. set aside. mix meat ball ingredients and make into balls. saute in 2 tbsp butter and 2 tsp oil. drain oil and add sauce to meatballs and simmer for 15 minutes..... enjoy.
i served it with rice and pan fried kale. Bayli loved it and sean ate all including what i set aside for lunch!

My first Real Quilt

I thought that I should post my first real quilt that I made for my auntie jackie's birthday. It is called "Paris in the Spring." It was a kit that I purchased from the local quilt shop and took me a while to make.

An easy dinner

I made this tonight and the fam liked.

-cook some macaroni
-melt some velvita cheese with a bit of milk
-steam some chopped broccoli and red pepper
-add some s + p.
mix it all together and enjoy a quick and cheap meal.
I served this with some sliced cucumbers.

My Grocery Budget Challenge

The Challenge is going well, although I had to change it from 350 to 400/month. It doesn't go so well when I shop at costco but great when I go to superstore. Eating one veggie meal once per week cuts down on cost too. Hmmmm, what else? Menu planning works great; I have been planning a week at a time and then shopping for only what I need.
So that is my report!! I will keep you posted.

Yummy Spinach and Artichoke Dip.

  • 1 C chopped Artichoke Hearts (I use canned)
  • 1/2 C chopped frozen spinach, thawed
  • 8 oz cream cheese
  • 1/2 C fresh grated parmesan cheese
  • 1 tsp red pepper flakes
  • 4 garlic cloves, minced or pressed (or more if you’re a super garlic lover)
  • salt and pepper, to taste
  1. Cover the spinach and artichoke hearts with just enough water to cover, boil over medium heat until tender. (roughly, 10 minutes) Drain when done.
  2. In a saucepan over medium heat, saute the garlic in just a hint of olive oil, when the garlic becomes a bit translucent and yummy smelling, add the cream cheese and heat until it’s hot.
  3. Add the spinach artichoke mixture and the spices, mix well.
I am taking this to my Aunt's birthday.  I am serving it with those topable crackers.

Lisa's Hamburgers

My burgers are good.  Don't mean to brag, but they are. Here is how to make them.

1lb ground beef
2 squirts of bbq sauce
1 med onion, chopped fine
bread crumbs, about 1/2 - 3/4 of cup, depending how juicy the mix is. add it last.
1 egg
couple swooshes of worchestershire
2 blip blips of tobasco
about 1/2 tablespoon of montreal steak spice
pepper,
salt
3 cloves of garlic, pressed through a presser.
Mix it all together and add the bread crumbs last to make it the consistency you want it.
form a round ball and put on a plate.  Use another plate to squish it down into a little patty.  use wax paper to prevent sticking to plate.
bbq and enjoy.

Chicken Adobo

about 6 boneless/skinless chicken thighs

1/4 cup water
1/4 cup white vinegar
1/4 soy sauce
2 cloves of garlic

Put all ingredients (including the chicken) into a sauce pan with a lid. Bring to a boil then turn it down to a simmer for 60min.


I was at work and asked one of the philipino ladies what they cook that is yummy and easy and this was it! There is nothing to it and Jaxson eats it all up! I serve it with rice and usually broccoli.

Meatballs with sweet-and-sour sauce

hey momma's
I made these last night and were easy and good.  Clark liked them too.
Meatballs
1 lb ground beef
1 medium onion, finely chopped
1 apple, peeled and grated
1/2 cup fresh white bread crumbs (i made my own with brown bread and it was fine)
1 tbsp. chopped parsley ( i used dried and it was fine)
1 chicken bouillon cube, finely crumbled
2 tbsp cold water
salt and pepper.
2 tbsp of veg. oil.
Mix together all the ingredients for the meatballs and chop for a few seconds in a food processor. Using flourd hands, form into about 20 meatballs.  Heat the oil in a frying pan and saute the meatballs, turning occasionally, until browned and sealed (10-12 mins).  

Sauce:
1 tbsp soy sauce
1.5 tsps corn starch
1 tablespoon of veg oil
1 med onion, finely chopped
1/4 cup of diced red bell pepper
One 14.5 ounce can of chopped tomatoes
1 tbsp of cider vinegar
1 tsp brown sugar
pepper.

To make the sauce, mix together the soy sauce and cornstarch in a small bowl.  Heat the oil in a pan and saute the onion for 3 mins.  Add the bell pepper and saute stirring occasionally for 2 mins.  Add the tomatoes, vinegar, and sugar, season with pepper and simmer for 10 mins.  Add the soy sauce mix and cook for 2 mins stirring occasionally.  Blend and strain, or puree.  pour the sauce over the meatballs and cover and simmer until heated through. about 5 mins.  serve with rice.

Spaghetti with Zesty Bolognese

Hey moms,
this was a good supper.  I actually forgot to add the cream cheese and it was still really good.  I also used a mix of spinach and regular spaghetti.  Clark even enjoyed it.

1 small onion, chopped
1/4 cup  Light Zesty Italian Dressing
1 lb. extra lean ground beef
1 can  (15 oz.) tomato sauce
1 can (14 oz.) diced tomatoes, undrained
2 Tbsp.  1/3 Less Fat than Cream Cheese
12 oz. spaghetti, uncooked
1/4 cup  Grated Parmesan Cheese

Sun tea

Sun tea.... cheap easy make your own ice tea.
i make it all summer long and you can make different flavours using different teas. i use a huge glass jar which i fill with water and 5-6 tea bags some sugar (i don't use much at all but for black teas i would use 1/4 cup for 3 litre jar) then i leave it out in the sun for a few hours. then take out the tea bags squeeze in some lemon and give it a stir and chill. yummy easy and CHEAP. right now I'm making green tea sun tea as that's the herbal tea i have but black tea works or herbal teas or a combo.

Supper tonight.

Okay,
I have been reprimanded for slacking so I should post my supper for tonight.  
Tonight I have made a left-over quiche. 
We made a pizza the other night and I had some left-over pepperoni and mushrooms, so i made a quiche.  I didn't use a recipe so I don't have exact measurements but here we go.
3/4 cup chopped pepperoni
1/2 cup chopped mushrooms
1/2 can of drained stewed tomatoes
1/4 of a red pepper (chopped)
1 cup mozzarella cheese
4 eggs
1/4 cup milk
pie crust. I made from veg cristco and all it takes is flour, crisco, and water. super easy.  the box will have directions. anyone who has a kitchen aid can make this.
make pie crust
roll out dough, place in bottom of pie plate
add pepperoni, mushrooms, tomatoes, peppers, to bottom of pie crust.
in a separate dish, beat eggs and milk, add salt and pepper and cheese.
pour eggs into pie crust on top of the veggies and meat.  
put in oven at 375 and cook around 45-50 mins or until eggs set. enjoy.

Stuffed Pasta Shells (tonights dinner)

1 box of Pasta shells
1 package of ricotta cheese
1 package of frozen spinach
1-2 jars of pasta sauce (or make your own)
garlic
1 egg
Parmesan and mozzarella cheese (as much or as little as you want)

Put some pasta sauce on the bottom of whatever pan/dish you are using. Put the cooked pasta shells in single layer on top of the sauce.
Mix together ricotta cheese, spinach, egg, 2-3 cloves of garlic and about 1/4 of parm cheese. Stuff the pasta shells with this mixture.
Cover the pasta shells with more pasta sauce and grate mozza and parm cheese all over. Cook at 350 degrees for about 30-40 min.

This also freezes really well! You just need to cook it for longer when putting into the oven frozen. Jaxson really loves this!! And so does the hubby :)

grocery budget

I am challenging myself to a grocery budget.  Once a month I will take out 350 cash and stick to that for the entire month.  I will exclude diapers from this budget.
what do you think? think I can do it? anyone want to join the challenge and share your ideas??

give me some tips as I am a recipe shopper and turns out this is the worst way to make the dollar stretch.

Simple Chicken Parmesan

1 jar (700 mL) pasta sauce
6 Tbsp. parmesan cheese (or however much you want, I put lots)
6 small boneless skinless chicken breasts or use chicken thighs
1-2 cups of mozza cheese

PREHEAT oven to 375°F. Pour sauce into 13x9-inch baking dish. stir in 1/4 cup of the Parmesan cheese. Add chicken; turn over to evenly coat both sides with sauce. Cover with foil.

BAKE 45-60 min. Uncover.

TOP with mozzarella cheese and remaining Parmesan cheese; continue baking 5 min. or until chicken is cooked through and cheese is melted.

I serve it on it's own or sometimes with rice

We went to lavish for a mini mani and then some make-up.  Top it off with blush zinfandel and chocolate and it was good...
Off to arms reach bistro in deep cove for supper; we all ate pasta. yum.
We had a fun night.
Now I have to figure out what for dinner???

Teriyaki chicken

1/4 cup brown sugar
2 tbsp soy sauce
1tbsp water
2 tbsp rice vinegar
2 tsp sesame oil
2 tsp corn starch
2 tsp minced garlic

Cook this sauce on the stove until thick, sometimes I will double the recipe for extra sauce.

Any kind of chicken you want (thighs, breasts, drumsticks) it also tastes good with salmon.

Tonight I'm making chicken drumsticks. I'll cook the sauce and pour it over the drumsticks then bake the drumsticks for almost an hour at 375 degrees. Usually we would BBQ the chicken but it's raining today. We'll have potato salad and sauteed zucchini with it.

Friday night dinners.

What does everyone else do on friday nights? Friday night is kind of a relief to me knowing that I will have some more hands for 2 whole days. Therefore, I kind of give up on the cooking idea and usually opt for freezer pizza and a glass of red wine. What about you? We usually watch a movie after Clark goes to bed and then lights out. Friday is not an exciting night...but then there is saturday.


I like Friday nights too and it's nice to have the hubby home on the weekend! We usually watch a movie with wine...tonight Pat's cousin is playing at the Bourban downtown (he's in a group called the Turn) so I am here on my lonesome but kinda looking forward to it. Tomorrow Pat has tricks up his sleeve and says he's stealing me all day because my wonderful friends are stealing me on my birthday!

Greek Orzo Salad

Orzo (as much as you want)
Handful of grape tomotoes
1 red pepper
1 yellow pepper
1 cucumber
1/2 red onion
1 package of greek feta
You can use bottled greek dressing or I just use olive oil and some balsamic vinegar to taste.

Greek Pasta Salad

A Salad that has been enjoyed by me, robin, and toby; and super easy to make. 

3 cups bow-tie pasta, uncooked
2 cups baby spinach leaves
1 cup greek feta
1 cup cherry tomatoes, halved
3/4 cup drained and canned chick peas, rinsed.
1/2 cup greek dressing. (you will have to go on jennyslittlehome to find a recipe for greek dressing if you want it from scratch).

Cook pasta as directed on package; drain. Place in large bowl.
Add remaining ingredients; mix lightly
Serve or refrigerate.

Are you sick of scrubbing gross dried on food microwaves? Put half a lemon in the microwave and cook if for about 30 sec to a minute. This should loosen up all the dirt, which makes it easier to wipe.

I also use a microwave safe bowl filled with water and a few tbsp of vinegar. I put it in the microwave for 3-4 min and it loosens everthing up making it very east to clean!!!

Potato Salad

Hey moms
I made this tonight but I didn't use all that mayo.  I also didn't use that many potatoes 'cause it was just two of us eating it.  YUMMY.  I also served ribs and corn.

1/2 cup mayo
1/4 cup chopped fresh dill
4 cups cubed new potatoes
1/2 cup chopped green onion
salt and peppa

combine mayo, dill, salt, and pepper in large bowl.
Add potatoes and green onion.  refrigerate until chilled.

This blog is to help our little circle of mommy friends to get ideas on many different avenues.  For example, what did you cook for supper last night?  Did you find a sale on diapers?  Is there a cool new pair of jeans out there that make your butt look good?  Is there an event that we must go to?  Get it?  Just add it in and we can have our own little community of ideas.  Mainly though, how many times are we pulling our hair out trying to think of what to make for dinner or what to pack for lunch, or what food to try for our kids.  Lets let it all out and tell each other everything!!!
